Thai veg curry
There is a story to every recipe new and old..... My sister always tells me I like every m , I must have been a Muslim in my previous birth.... I do love, but I love Thai , Japanese and Chinese cuisine more , so there are chances that I was a Chinese Muslim if that's possible!???
I have my own easy yummy version of chicken Thai curry, ... It's easy coz the chicken stock lends a lot of flavour to the curry where as in the veg one u reall y need to get the ingredients right for it to be flavoursome
So this time I tried to follo a few rules.... Was not fully satisfied , so added my twist to it yet again...hmmm.. I can never follow a recipe .... Very bad
Paste
Get all Thai ingredients together
Lemon grass one stalk
Galangal, little less than thumb size
Lime leaves( two
Garlic 5-6
I do not use fish oil or shrimp paste
Red Thai chillies depends on u, small one 7 to 8
Now mostly , when making for two to four persons I do not make a paste , but cut and use these ingredients , and fish out the non edible lemongrass and galangal later, but if making for more then the flavour will not come without the paste....
So go ahead and make a paste, then cook it insome oil....u can always store the remainder.
Curry
Regarding the quantity of paste to be used, start with less, u can add more later any time since iris already cooked. After sautéing little paste in oil, add salt , pepper ( white if svailable), paprika ( red pepper with more colour), peanut paste( only i use this )pour water , boil , then add coconut milk, then just before it is about to boil add vegetables , give it a boil and turn off heat, and that's it... They cook really fast....

Baby tomatoes
Mushrooms
Broccoli ( absorbs curry)
Snow peas ( my fab)
Sprouts
Red capsicum
Yellow capsicum
That can be added
Paneer
Thai brinjal( they look very cute) I use them for presentation
Zucchini
Green capsicum
The last but not the least , basil leaves, never forget , makes the world of a difference, my fav ingredient in Thai ....
Tear with hand and put it in.... Also put one lime leaf, it is very strong... Just put whole.
